Notes from the Vigneron
The Petit Verdot grapes are selected from a single row, grown on the South-facing slope of the Franschhoek Valley.
Grapes are selectively harvested by hand from both sides of the row – this provides a component of ripeness and acidity.
The grapes are lightly crushed before co-inoculated fermentation and maceration in an open 500L oak vat. The fermentation is cooled, kept below 16 degrees Celsius and extended over three weeks. The skin cap is punched down by hand multiple times a day during this period.
A Free-Run cuveé was collected through a basket press and then matured in a single 228L French oak barrel for 19 months.
Vinified exclusively through gravity-flow. Bottled by hand, un-fined and unfiltered.
Only 285 bottles produced.
