The Chardonnay and Viognier components for this blend are grown on opposite sides of the Franschhoek Valley. This is a joining together of their characters, a harnessing of their variation in expression.
The Viognier grapes were harvested early, the first pick from the My Wyn viognier vineyard. They provide the base of acidity.
The Chardonnay is a component harvested from the west-facing side of the single row of Chardonnay. Unusual for a blend that contains Viognier, the Chardonnay component is the riper of the two, providing more developed flavour compounds.
The grapes were pressed together and the free-run cuvée was collected. In a single 228L seasoned French oak barrel, these combined juice fermented together and matured on their lees for 19 months.
